This package contains Cassia, which is the proper name for what most people in North America call Cinnamon. Cassia comes from the inner bark of a tree found in Asia. This specific Cassia comes from Indonesia, made famous as it was once the most profitable spice in the trade routes of the Dutch East India Company, and more valuable than gold. Young branches of the tree tend to have higher cinnamon oil content, which determines the strength and quality of the Cassia. This is considered quite strong with an oil content of 2.8 - 3.6%. It will liven up any dish it's added to - and will make a really excellent cinnamon bun!
