Parsley is one of the french fines herbs - a combination considered perfection if done correctly. Its fresh, clean taste and warming, calming disposition always remind us of summer! It pairs well with fatty foods to make them feel less heavy, and works equally well with super fresh vegetarian cuisine: a good example is Tabbouleh - a middle eastern salad made mostly of parsley, tomatoes, bulgur wheat and green onions with olive oil with lemon juice. If you're unfamiliar with this great herb, begin by using it as a garnish, in rise, on meats, poultry, fish and eggs. Add it towards the end of cooking as this delicate herb can't take much heat.
