Precious Eyebrow is the translation of this tea’s Chinese name of Chunmee, or Chun Mee which is written as zhen méi in pinyin ~ it’s a high-grade leaf tea from the southern and eastern provinces of China.
This tea is easily recognized by the rolled leaves shaped like curved eyebrows, blue tinged colour, and smoky aroma. It brews bold, slightly acidic, astringent and sweet with a fruity finish and amber colour~ forever drinkable with not much tannin to make it go bitter. If you’ve ever gone to a fine Chinese restaurant where you just couldn’t stop drinking the tea, it was probably this style.
We do this tea (and all our green teas in fact) quite differently than most bagged teas ~ they all start as full leaf teas which we crush slightly to fit them in the tea bags. No tea dust allowed!
