Description
Rooted and aromatic ~ Dong Quai, sometimes called Chinese Angelica, is a graceful plant related to carrot, celery, parsley and coriander. With its feather like leaves and clusters of small white flowers, it grows in the mountainous regions of China. Its pale yellow roots are sometimes used in soups and stews in Asian cuisine ~ with use dating back to 400 BC. Its pinyin name of dānggui translates to state of return.
The brew is a clear amber infusion that begins earthy and woody, immediately followed by a distinct, pungent sharpness reminiscent of celery or celery root with an aroma that is warm and earthy. It’s subtly sweet and grassy notes are pleasant and refreshing with layers of character.
