Bright and familiar, Chickweed is a small, tender plant that thrives across temperate regions and into northern climates, often appearing wherever soils are cool and lightly disturbed. Its botanical name, Stellaria, comes from the Latin for star ~ a nod to the tiny white blossoms that catch the light.
Look closely and you’ll find egg-shaped leaves and small, star-shaped flowers with five petals so deeply notched that they can seem like ten. The blooms open with the morning light and tend to follow the sun, while the leaves draw closer at night, lightly sheltering new shoots. In the cup, Chickweed is gentle and green, with a soft, grassy aroma and a mild, leafy taste that recalls early spring greens.
