This thistle-like plant is native to the temperate Mediterranean and we use its bitter, silvery green leaves for tea. Artichokes you find in the grocery store are the large, green, unopened flower buds that form above the leaves. Because the leaves carry a naturally bold bitterness, we’ve balanced them with lemongrass, a tall, tropical grass that thrives in warm climates and brings a bright, citrusy freshness to the cup.
The infusion is a clear golden to light green with an aroma that’s fresh and gently green, lifted by a clean citrus note. The taste is strong and layered with the artichoke leaves bringing grounded, bitter depth and a zesty lift from the lemongrass.
