How to make Sunset Carrot and Lentil Soup...
Sweat your vegetables ~ Warm one tablespoon of olive oil in a pot and add 1 chopped Onion and 4 sliced Carrots and cook them until they begin to soften and the onions are slightly transparent ~ chefs call this “sweating” the vegetables, and it’s part of a classic French method to start soups, sauces, and many other dishes.
Add your Lentils and Spices ~ 1 teaspoon of lightly crushed Anise seed, 1 teaspoon of ground Cumin, 1 cup of red Lentils, and 5 cups of vegetable stock.
Simmer for 20 to 25 minutes, until the Carrots and Lentils are tender.
Blend to a puree with a blender, then stir in a squeeze of Orange or Lemon juice and Black Pepper.
Enjoy! Serve warm or cool with toasted Anise seeds or chopped Parsley and a buttered slice of rye toast.
How to make Coastal fish sauce…
Combine melted butter and Anise seeds to toast over low to medium heat. Shake the pan constantly so the Anise doesn't burn.
Once you can smell the Anise’s character come alive, remove your pan from the stove and finish with fresh Lemon juice and green Onion rings.
Serve your quick sauce over fish for a Mediterranean style treat.
