Burdock has a long history of use. This Russian native now is a common weed in much of North America and Europe. In parts of Asia, it’s cultivated as a root vegetable as part of the regular diet.

Growing 2-5 feet tall, with a thick woody stem and deep roots, you can spot Burdock in country pastures and along fencerows. It is recognized by its purple flowers and round burrs that are known for sticking to hikers clothing.

Burdock has a bitter and sweet taste which makes for a delicious and earthy tea.

Directions

Burdock root is tough, and to bring out its best properties, it’s important to simmer it or expose it to heat over time. When brewed this way, the result is called a decoction. 

Stovetop Decoction (more work, more potent) Combine 1 teaspoon of Burdock per cup of water in a stainless or glass pot. Cover and boil briefly, then turn down the heat and simmer 10 to 20 minutes. Strain with a coffee filter. 

Mason Jar Method (easier and less potent) Per cup of tea desired, add 1 teaspoon of Burdock and one cup of freshly boiled water to a mason jar and secure the lid. Let steep for at least 30 minutes and shake vigorously every 5 minutes or so. Strain with a coffee filter. With either method, extra tea can be stored in a covered glass jar in the refrigerator for a few days.
