Cassia is the more proper name for what most people call Cinnamon; it is a closely related species with slightly different characteristics. Of the cassias, there are three major types in use today: Saigon (Vietnamese), Korintje (Indonesian) and Chinese. Our “Saigon” cassia cinnamon, from Vietnam, has a bold, sweet flavour and is much stronger than the other kinds of cinnamon, with a sweet spicy heat like red-hot candies This is tea for people who like bold tastes and are unafraid of big flavour.
