This is Ceylon Cinnamon, also known as “True” cinnamon, is the go-to species for herbalists and naturopaths when treating patient. It’s very different than what is used in most kitchens. Ceylon cinnamon comes mostly from Sri Lanka and is harvested by hand; it’s a very thin and delicate layer of the inner bark. When made into tea, it brews to a golden red colour with a robust full body without any bitterness or astringency. It has a warming effect with a wonderful aroma with hints of citrus. Excellent as dessert after a large, spicy meal. Enjoy!
