About Korintje Cinnamon…
Cassia is the more proper name for what most people call Cinnamon; it is a closely related species with slightly different characteristics. This Korintje Cinnamon is by far the most commonly used and is the flavour most people are used to. Compared to other cinnamon, it has a strong and rough flavour, with a sharp, slightly sweet and hot edge. Its aroma is pleasant and colour is like dark honey. This particular kind of cassia, when steeped for a long time, becomes slightly thickened and develops a nice mouth feel that is almost like a sugary drink. Try this top tea with a little ginger for an awesome midday pick me up or all by itself as an after-dinner treat.
