Black, green and white tea all originate from Camellia sinensis. It's a speciies of evergreen flowering shrub whose leaves and buds are used to produce tea. After harvesting, the leaves are treated with varying levels of fermentation/oxidation and roasting: black tea being the most oxidized, white the least, and green somewhere between.
