Chondrus crispus is a species of red algae that is prevalent on rocky parts of the Atlantic Sea Coasts. The colouration of this sea vegetable varies on where it is harvested. The colder the water temperature, the darker (and deeper) the colours get - it can range from bright green towards the surface of the water, to deep red at greater depths.Irish Moss contains the carbohydrate carrageenan, which acts as a powerful thickener when boiled with water. It is widely used for jelling custards, thickening broth, or making natural skincare products.
