Description
A close relative of the blueberry, Bilberries have grown wild across northern Europe for centuries. Low to the ground and spreading, the shrub bears dark blue berries that stain lips and fingers with deep purple juice. Long valued as food ~ eaten fresh, baked into pies, or preserved as jam ~ Bilberries became woven into European folklore and kitchens alike for their vivid blue and tart taste. During World War II, British Royal Air Force pilots famously ate Bilberry jam before night missions.
Brewed, Bilberries produce a reddish-purple tea with bright, fruity character. The taste is smooth yet tart, with notes reminiscent of blueberries and black currants, making it Europe’s classic berry infusion. We especially enjoy Bilberries blended with Yerba Maté or Earl Grey tea or a lively, distinctive cup.
